How the wine gets made

In Marshall's experience, ninety-five percent of the quality in the bottle comes from the grape that was harvested. So the work is finding the best available fruit — Temecula Valley through the Central Coast to Northern California — and getting out of its way.

Newer equipment cleans and separates fruit more efficiently, leaving it less bruised and limiting oxidation for a brighter, more flavourful wine. Barrels are chosen individually, new and different oaks, for complexity and full, rounded tannin.

Thirty-nine years in, with palates as diverse as they are, he holds that a winery should offer a range wide enough that there is genuinely something for everyone. Six or more varietals sit on Total Wine shelves across Southern California from $15.99; the Reserve Estate Cabernet is over a hundred. Same hands either way.

NEW BARRELS ARE THE KEY ELEMENT IN HAVING A VERY COMPLEX WINE.
